First reference in written sources

Only starting second half of XIth century or, perhaps, end of XIth century – beginning of XIIth century it is possible to describe the evolution of production of alcoholic beverages from semi-finished products other than honey, namely from the grains of cereal plants.  

This production, was evidently developed as side and accidental branch of bread baking and was closely connected with the division of the Church into Orthodox and Catholic hence the dispute about Eucharist (i.e., the usage of only unleavened or only yeast, "fermented" bread to receive the sacraments).
